Cannoli

Ingredients:
- 30 gr Vala Pastry
- 250 gr flour
- 1 whole egg
- 1 egg yolk
- 40 gr apple cider vinegar
- 5 gr salt
- 8 gr sugar
- A little cinnamon
Cream filling:
- 350 gr ricotta cheese or labneh (dehydrated)
- 30 gr honey
- Zest of 1 orange
To fry:
- 1 kg Vala Fritex
Instructions:
All of the ingredients for the dough should be mixed together into a stiff dough, which should then be wrapped in plastic wrap and chilled for 15 minutes. Roll out the rested dough very thinly with the help of a rolling pin without using too much flour. Cut it with a round mold (5 cm in diameter) and wrap it around the cannoli form, apply egg white to the joint so that the edges of the dough does not open while frying. After wrapping all the dough in a cannoli form, heat the Vala Fritex at 170°C. Well-fry the cannoli shells, then after waiting for a bit remove them from the cannoli molds and allow them cool. Put the filling into it when it cools down.
For the filling batter:
Drain the ricotta or labneh cheese, add the orange zest and honey and stir until it becomes smooth. Use a piping bag to squeeze it into fried dough till it slightly overflows. Dip the ends in peanuts and sift powdered sugar on top and serve.
