Fudgy Chocolate Cookies

Ingredients:
- 120 gr Vala Pastry
- 450 gr dark couverture (between 55% and 60%)
- 180 gr flour
- 5 gr salt
- 4 whole eggs
- 300 gr granulated sugar
- 10 gr baking powder
- A little vanilla
Instructions:
Melt the Chocolate and Vala Pastry in the microwave or by using the bain-marie method. Then, beat the eggs and powdered sugar in the mixer until you can see the traces of the whisk and add this into the melted chocolate and Vala Pastry by stirring slowly with a wooden spoon. Add salt, baking powder and flour and gently whip this into the chocolate mixture. Make sure it’s smooth. Place the prepared mixture in a piping bag fitted with a flat tip and squeeze it onto a baking tray lined with silpat silicon, leaving a bit of space between each pastry, and set aside for 15 minutes. Bake for 10 minutes in the oven preheated to 150°C.
Note: If desired, it can be made in the form of sandwiches by putting filling cream in between the layers. (200 gr caramel filling and 5 gr Turkish coffee).
